
Mango Sticky Diva Rice
A tropical Thai-inspired dessert made guilt-free with zero-carb Diva Rice. Warm coconut-infused rice is topped with sweet ripe mango and a drizzle of creamy coconut sauce β all the indulgence of traditional mango sticky rice with a fraction of the carbs. Light, refreshing, and ready in under 15 minutes.
Ingredients
- 2 cups Diva Rice (prepared according to package directions)
- sea salt (pinch)
- Β½ cup full-fat coconut milk
- 2 tbsp monk fruit sweetener or allulose (adjust to taste)
- Β½ tsp vanilla extract(optional)
- 1 large ripe mango (peeled and cubed)
- toasted sesame seeds (for garnish)(optional)
- fresh mint leaves (for garnish)(optional)
Instructions

Prepare 2 cups of Diva Rice with hot water according to package directions. Fluff gently and stir in a pinch of sea salt while still warm.

In a small saucepan over low heat, warm the coconut milk. Stir in the sweetener and vanilla extract until fully dissolved and smooth. Do not boil.

Pour about half the coconut sauce over the warm Diva Rice and gently fold to coat. Let it absorb for 2β3 minutes.

Divide the coconut-infused rice among serving bowls. Arrange the mango cubes alongside or on top of the rice.

Drizzle the remaining coconut sauce over each bowl. Sprinkle with toasted sesame seeds and fresh mint leaves if desired.

Serve warm for a comforting dessert, or refrigerate for 30 minutes for a chilled tropical treat.
