
Cheesy Baked Diva Rice
A creamy, golden-baked comfort dish that proves healthy eating doesn't mean giving up flavor. Seasoned ground beef or chicken is layered with zero-carb Diva Rice and a melty blend of cheddar and mozzarella, then baked until bubbly and golden. All the satisfaction of a loaded rice casserole with just 3g of carbs per serving.
Ingredients
- 1 cup Diva Rice (prepared according to package directions)
- ¼ cup cup ground beef or chicken (cooked and seasoned)
- ½ cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 2 tbsp butter (melted)
- ½ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp salt (to taste)
- ¼ tsp black pepper (to taste)
- 1 tbsp fresh parsley (chopped, for garnish)(optional)

Preheat your oven to 375°F (190°C). Lightly grease a small baking dish with butter or cooking spray.

Prepare 1 cup of Diva Rice with hot water.

In a mixing bowl, combine the prepared Diva Rice, melted butter, garlic powder, onion powder, salt, and black pepper. Stir until evenly mixed.

Add the cooked and seasoned ground beef or chicken to the rice mixture and fold together.

Spread half the mixture into the prepared baking dish. Sprinkle half the cheddar and half the mozzarella over the top.

Add the remaining rice and meat mixture on top, then cover with the rest of the cheddar and mozzarella cheese.

Bake uncovered for 15–20 minutes, until the cheese is melted, bubbly, and golden brown on top.

Remove from the oven and let cool for 2–3 minutes. Garnish with fresh chopped parsley if desired, and serve warm.
